Meat, soups and stews
Meat soups and stews being prepared for the Sultan Ghiyath al-Din. Soup and 'las' being cooked. The small inscription is 'taghd?iya, ' food, nourishment). Ghiyath Shahi is seated in a garden pavilion which has a large blue dome. Two cooks are near the stove in the foreground, one is chopping meat, the other has his hand on the pot lid. The meat, 'las' (hashed meat broth) or 'yakhni' (soup) section. Opaque watercolour. Sultanate style. Image taken from The Ni'matnama-i Nasir al-Din Shah. A manuscript on Indian cookery and the preparation of sweetmeats, spices etc. Originally published/produced in 1495 - 1505.
