Dominique Anract comes from a family of bakers and this is his third bakery, where he employs 30 people and 8 apprentices, housed in a building built in 1868 under Napoleon III. He is also president of the Confederation Nationale de la Boulangerie-Patisserie Francaise, or National Confederation of French Bakery, tasked to protect the quality and integrity of French bakery and patisserie.
